Okay, so, if you know me at all, you will know I absolutely ADORE banana bread!!! I have spent a little while working on this recipe, which is actually based on a Banana loaf recipe by the marvellous Mary Berry!
This is a superrr simple recipe (literally whack it in a bowl and cook it...), so hopefully will be pretty easy to recreate.
Ingredients:
225g self-raising flour
175g caster sugar
100g softened butter
1 tsp. baking powder
2tbsp. milk
2 ripe bananas (mashed)
2 large eggs
40g chocolate chips for the mix and ~15g to sprinkle on top (NB - all choc is optional. Although, who would turn down chocolate?!)
Method:

Pop the oven on - 180C / 160C fan / Gas mark 4
Grease a 2lb loaf tin - line with baking parchment if it's not silicone
Measure and mix the ingredients in the order listed above.. The easiest way to combine the ingredients effectively is to thoroughly mix between each addition. E.g. add the butter and fully combine with the flour and sugar before adding the baking powder and mixing thoroughly again, etc.
Pop it in the loaf tin and cook for 1hr until a skewer comes out clean
That's literally IT... Just try to leave it long enough that you don't burn your mouth!!!
The other amazing thing about this recipe is that it freezes really well, so if you're going to struggle to get through it all (I've personally never had a problem !!), just slice and pop it in the freezer and then just defrost for a few hours, or microwave when you fancy a slice!
